Ingredients:

 

  • 2½ cups all-purpose flour
  • 2½ tablespoons Oodle Coffee Matcha Powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1½ tablespoons brown sugar
  • 1 tablespoon vanilla extract
  • 1 large egg, room temperature
  • ½ cup coarse sugar (e.g., turbinado)

Instructions:

  1. Preheat Oven: Set your oven to 350°F. Line baking sheets with parchment paper or silicone mats.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, Oodle Coffee Matcha Powder, baking soda, baking powder, and salt. Set aside.
  3. Cream Wet Ingredients: In a separate bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 1-2 minutes. Mix in vanilla and egg until well combined. Scrape down the sides of the bowl with a spatula.
  4. Combine & Mix: Gradually add the dry ingredients into the wet mixture, mixing just until incorporated. Be careful not to over-mix.
  5. Form & Coat: Pour the coarse sugar into a shallow dish. Using a cookie scoop or tablespoon, portion out dough (~1.7 tbsp per cookie). Roll into balls, then gently coat each in the coarse sugar. Place them on your prepared baking sheets, spacing 1½–2 inches apart.

Bake
